Pin-tastic!

I wanted to share a great recipe that I found on Pinterest.... go figure.
It's really good and pretty healthy. 

Southwestern Chopped Chicken Salad
 For the salad, you will need:   
  • 2 cups shredded chicken
  • 1 green bell pepper, diced
  • 1 can black beans, rinsed 
  • 1 can sweet yellow corn (or 1 cup frozen corn, thawed) 
  • 2 roma tomatoes, diced
  • 4 green onions, sliced - Harris Teeter was out of green onions so I used a regular onion, I think they're called "white" onions, I'm not sure.
  • 1 head ice berg lettuce, washed and chopped 
  • 1/4 cup cilantro, chopped
  • 2 ripe avocados, diced - My avocados were not ripe, so I also left this off
  • 1 cup crushed tortilla chips
 For the dressing, you will need:  
  • 1/2 cup mayonnaise
  • 2/3 cup Greek yogurt 
  • 1 tbsp ranch seasoning - I left this off, just personal preference 
  • 1 tbsp taco seasoning

Directions:
In a large bowl, combine all salad ingredients together, excluding the tortilla chips.

In a small bowl stir all dressing ingredients together.  Pour dressing over salad, starting with about half of the dressing.   Toss to combine, then gradually add more dressing until it is dressed to your liking.  Top with tortilla chips.  Enjoy!

* I did not combine the dressing with the salad because I was not sure if everyone would like the dressing. I served the salad then allowed the individual to apply the dressing.
* I also tried this in a wrap (minus the tortilla chips) with some sour cream. It was VERY delicious! I personally prefer it in a wrap.
* This recipe makes a lot. It feed several people over the course of several days.

I did not take a photo after everything was mixed........ obviously I was too busy eating!
