Shows I'm into............

Happy Monday! I made it back from Nashville and I had a blast!
I will do a post on that later in the week.
Right now, I was gonna chat a little about the tv shows I am into.....

One of my all time favorites...
 
My favorite team member is Danni..... I hope she wins it all.
I hope Gina goes home soon, she is too much drama.
I'm glad Jillian is back this season. I love her and the relationship she and Bob have.
This show makes me wanna workout and is somewhat inspirational.
Typically, I watch it at the gym on Monday nights.

Next up is Vanderplump Rules.....
Lots of drama, probably fake or producer-inspired but its a guilty pleasure.
Stassi is too much drama for me but I guess she, Jax and their drama are what makes the show. 

*Both of these air Monday nights so it gives me something to look forward to on Mondays.

My old favorite that I still watch is Grey's Anatomy.
If they ever get rid of Meredith, Derek, Miranda or Richard, it will not be the same for me.

These are only the 3 shows I currently DVR.
I love the Housewives (any city) but I just catch them on reruns during the week or weekend.

I'm ready for Mad Men to come back. I love it!
I believe it returns in late March or early April.


Since everyone keeps talking about Downton Abbey, I plan to rent Seasons 1, 2 and now 3 so I can catch-up. I wanna see what the hype is all about.


Although, there is a lot of hype about Walking Dead but that is one show I can/will not watch.
Zombies are too much for me.....

Highs and Lows......

I saw this on another blog and it seemed fun so I thought I'd give it a whirl today.

Highs and Lows of the day

High of today: Stopping at Chick-fil-a for breakfast.


Low of today: not realizing earrings were in my cup holder when I placed my refreshing Diet Dr. Pepper from Chick-fil-a in it. 5 minutes later, wondering why my cup is leaking. Frantically tossing it out the car when I realized what was going on (sorry for littering, but I freaked, it was a big leak - I do recycle). 2 minutes later remembering the earring was attached to the bottom of the cup. Then realizing that not only did I NOT get to enjoy my refreshing Diet Dr. Pepper but I lost an earring.........

It gets lower.........
Drinking WATER with my chicken minis.
Luckily I had water in my car but it just doesn't "go well" with chicken minis.
And, diet drinks are like my coffee, they get my day started right.

I feel like I'm having a lot of days like this.

Happy Monday........... (late)

*I wrote this on Monday but forgot to publish it. Sums up my Monday.....

You know the week is off to a good start when early Monday morning you are awakened at 3 am by your fire alarm. No worries, it wasn't a fire. I just need to purchase a new battery.  However, removing the battery doesn't stop it from beeping thanks to the lovely, back-up battery.
All that ruckus at 3 am, caused me to oversleep and miss my workout class and be late for work. Ahhh, gotta love Mondays.

This weekend I kept it causal.
Friday night, I went with my cousin, BJ and Ben to see "Identity Thief." 
It was pretty funny. The part we were all looking forward to the most ended up being a let down thanks to the crappy speakers in our theatre.

Saturday, it snowed!
It snowed enough to leave a dusting on the ground, which is a big deal around these parts (which is why most churches were cancelled on Sunday.....).
Ginger is not a fan of the snow. Here is a fun shot of her jumping from the grass to driveway.
I went to the gym and worked out for a while.
I did run 3 miles in 33.30 which is FANTASTIC for me.

I made some delicious taco soup (a great recipe from pinterest which I will post later).
I then rented "The Campaign" from "On Demand" since there wasn't anything interesting on tv.
(Bravo shows "How to Lose a Guy in 10 Days" every weekend. Please find a new movie to air!)
It was pretty funny too. It was really short (I swear it only lasted an hour) but had some funny scenes.

Sunday, I went and visited my grandparents.
Good thing I worked out good Saturday, I needed it for all the calories consumed at their house.
We played Scrabble on the ipad all afternoon.
I also watched the "Amazing Race."
You need to watch it just to check out Chuck's mullet. It is permed and all. He also rocks jean shorts. His wife's name is pretty funny too, Wyona.

That sums up my weekend. Ready to get this work week over so I can head out to Nashville!

I have slacked with my running. I have been to the gym but I've been enjoying the elliptical.
 I have got to get back to training for this half-marathon which is about 2 months away.

Next weekend, I am heading to Nashville for a fun girls weekend!
I'm super excited!!!!

It's Valentine's Day! Happy Valentine's to all of you!
Be KIND to everyone you come across today! Love makes the world go round!
No matter if you are single or married, be thankful and cherish the day. We all are loved by someone, be it God, our friends, family, coworkers or pets.


It's also RANDOM ACTS of KINDNESS week!
It's better to give than to receive. Trust me, there is great joy in knowing you made someone's day. So do something for someone if it nothing more than a kind word or compliment.

Pinterest fail....

So earlier this week I posted a "pin-tastic" recipe I tried.
Of course we all know, everything is not pin-tastic.....

"Make-ahead Breakfast Burritos"
Make ahead Breakfast Burritos... Can Freeze and take out one at a time, microwave, for a quick breakfast on the go - better than packaged and less sodium. It only made 13 but they are yummy!

Ingredients:
1 lb pork sausage
1 package of hashbrowns
8-12 large eggs
1/4 cup of milk
1 package of shredded cheese
salt and pepper
1 to 2 packages of flour tortillas

Directions:
1. Brown the sausage then drain on a papertowel.
2. Cook hashbrowns in the same pan.
3. Mix eggs, milk, and salt/pepper together while hash browns are cooking.
4. Add browned sausage back to the pan to allow to cook with the hashbrowns.
5. Add eggs and milk mixture to the pan and cook until the eggs are done, stirring gently.
6. After eggs are done, lay a tortilla on the counter. Place mixture in the tortilla and top with cheese. Then roll into a burrito.
7. Wrap burritos in plastic wrap. Then place the wrapped burritos in a ziploc bag.

When you are ready to eat, you take out your desired amount (1-2 burritos), unwrap the burrito, place in paper towel, and microwave. If you have 2 burritos, she suggested you heat one for 45 seconds. Take it out and place the second one and heat it for 45 seconds. Then put the first burrito back in for 30 seconds. Repeat the same for the second burrito.


First, on a positive note
This is a great recipe to make if you plan on eating it immediately after it is cooked. They were delicious when I cooked them. I ate 2 or 3 for dinner that night.
BUT
When I reheated them several days later (after being frozen), they were not as tasty. The smell of the reheated burrito was TOO much for me. Maybe it was the brand of soft tacos I chose, I'm not sure. The hashbrowns were also "mushy" when reheated; they were gross and just ruined the whole thing for me It  was not appetizing at all.

I tried them again several days later, same experience. So I threw them out, all 20-25 of them....

I want to give this recipe a second shot. I think if I leave off the hashbrowns that it will help. Some suggested adding peppers or onions which isn't a bad idea, maybe that will mask the burrito smell.

This is all my opinion. Plenty people have given these good reviews on her blog but for me it was a pin-fail. If you happen to try it, let me know what you think.

Friday Randoms

Not much going on over here.......
Just THANKFUL it's Friday!!!

Just a long, busy week where I feel I didn't accomplish much (unless you consider ordering things online like it's your JOB productive because I have that down people). Packages have been rolling in everyday. I got a cute chevron dress in the mail.......

I ordered it from Modern Vintage Boutique however, they no longer are showing it online. This picture is from shopsosie.com which is another cute boutique. Check them both out. (I figured you'd rather see the dress on this model. The pic I have of myself is one where I'm standing on the toilet facing my bathroom mirror, modeling it to my 2 readers to get there feedback/opinions because I do not own a full length mirror. I keep meaning to purchase one but forget.)

Also, I got some cute chevron vinyl that I'm ready to use on something........ I'm seriously addicted to chevron. Target has chevron bathroom sponges, chevron tissue paper, and more in their $1 section. It was all I could do not to buy EVERYTHING.
When this chevron fad ends, I'm gonna need meds or therapy one.

I did do some crafts, okay not some, just 2, this week.
I was able to make a cute banner for a baby dedication brunch and a cute
Valentine's day shirt for a sweet girl.
 (Sorry for the huge picture. It will not let me make is smaller. Story of my week.)


I was also able to have dinner with this cutie and his mom one night this week.
I mean is he precious or what. He loves the camera. Just tell him to say cheese and the end result is this.......

Pin-tastic!

I wanted to share a great recipe that I found on Pinterest.... go figure.
It's really good and pretty healthy. 

Southwestern Chopped Chicken Salad
 For the salad, you will need:   
  • 2 cups shredded chicken
  • 1 green bell pepper, diced
  • 1 can black beans, rinsed 
  • 1 can sweet yellow corn (or 1 cup frozen corn, thawed) 
  • 2 roma tomatoes, diced
  • 4 green onions, sliced - Harris Teeter was out of green onions so I used a regular onion, I think they're called "white" onions, I'm not sure.
  • 1 head ice berg lettuce, washed and chopped 
  • 1/4 cup cilantro, chopped
  • 2 ripe avocados, diced - My avocados were not ripe, so I also left this off
  • 1 cup crushed tortilla chips
 For the dressing, you will need:  
  • 1/2 cup mayonnaise
  • 2/3 cup Greek yogurt 
  • 1 tbsp ranch seasoning - I left this off, just personal preference 
  • 1 tbsp taco seasoning

Directions:
In a large bowl, combine all salad ingredients together, excluding the tortilla chips.

In a small bowl stir all dressing ingredients together.  Pour dressing over salad, starting with about half of the dressing.   Toss to combine, then gradually add more dressing until it is dressed to your liking.  Top with tortilla chips.  Enjoy!

* I did not combine the dressing with the salad because I was not sure if everyone would like the dressing. I served the salad then allowed the individual to apply the dressing.
* I also tried this in a wrap (minus the tortilla chips) with some sour cream. It was VERY delicious! I personally prefer it in a wrap.
* This recipe makes a lot. It feed several people over the course of several days.

I did not take a photo after everything was mixed........ obviously I was too busy eating!

Friday Randoms....

Random thoughts.......

1. I have worn a cardigan (different ones, of course) the last 4 days to work. Can we say that I'm officially obsessed with cardigans??? I do LOVE a good cardigan.

2. I met my friend Jill last night to pick up my bridesmaid dress (another motivation for training for a half marathon). We met at Triangle Town Center and I was discussing these leopard flats I purchased there over Christmas. I wanted to peek in Payless (even though there's one 5 minutes from my house) to get another pair in black. We got to discussing these flats and lo' and behold, Jill was wearing the same flat in black. We then had a five minute discussion on how comfortable these flats are and how you never get blisters, etc.  People.... I have lots of flats, some cheap, some expensive BUT the best and most comfortable flats hands down are the DexFlex by Dexter flat at Payless. And my, oh, my they come in cute colors.  I own the leopard print and I get so many compliments on them. I plan to get them in EVERY color option available because it's all I plan to wear to work! Get you some and they're BOGO!

3. I totally loving "Vanderplump Rules" on Bravo. I am a big Housewives fan anyway and this is a spin-off. If you want to watch some mindless tv with drama, check it out on Mondays at 9 or 10 (I'm not sure).

4. My coworker, friend and craft mentor opened up a facebook business page. You need to check it out, she does awesome work and is so creative! So go on over and like "Briana Paige Designs."
